Peanut Butter Apple Sandwich

This is too yummy to pass up. As Halloween is right around the corner caramel apples are everywhere! I felt like making myself a snack, but thought of a peanut butter apple instead of caramel.

As I suspected, it's delicious! 

Ingredients:
1 red apple
1 green apple
Organic PB, almond butter, walnut butter, or cashew butter.

Directions:
1. Cut out the core of your apples
2. Slice your apple in to 4 or 5 chunks horizontally
3. Take the bottom piece of your red apple and slather nut butter on it
4. Place a green apple slice on top then repeat until you have a fully stacked apple sandwich
5. This makes 2, but you can grab more apples to make a bunch!

Lean & Green Protein Pancakes

Why not start off the morning with some greens. These look like HULK pancakes, but you can't taste the veggies and they are simply delicious! They are super healthy, lean, & green!

Recipe:
2 Egg whites 
2 tbsp Vanilla protein powder
1/4 c. Oats 
1 tbsp. Coconut flour
1 cup spinach
1 tbsp. Unsweetened apple sauce 
1 tbsp. Unsweetened almond milk
1 tsp. Cinnamon

Directions:
1. Blend ingredients together (I use a vitamix or nutribullet)
2. On pan pour 1/5 batter, flip when golden brown.
3. Repeat with the rest of the batter.
4. Enjoy! ( I like adding stevia and sometimes almond butter on top).

Crispy Baked Sweet Potato Fries

When sweet potato fries are on a menu, it's seriously hard for me to resist ordering them. I also crave super crispy fries! When my family asked me to make a side dish for our dinner this weekend I knew exactly what I wanted... Sweet Potato Fries

Ingredients:
Sweet Potatoes or Yams 
Salt & pepper
Optional: Extra virgin olive oil
Optional: lemon, rosemary, thyme 

Directions:
1. Preheat oven to 425 degrees.
2. Spray a cookie sheet with Extra Virgin olive oil.
3. Peel yams 
4. Thinly slice yams, in to "fry" shaped strips.
5. Spray& toss yams with olive oil and spices.
6. Bake for 15-20 minutes (20 minutes+ for crispy fries)

Three things

I spent the weekend with my family at a beach house rental near Santa Cruz. We haven't done a "family weekend" like this in a while. We all caught up on much needed sleep, a lot of quality time together, some workouts, and good food. 
I realized how important it is to take time away from your normal routine to be able to find the awesomeness in a completely different routine.

Today I snapped this picture on my phone, and I just love it. It is very "me".
Some things I love making time for are 1. healthy lunch stops at whole foods, 2. reading a new amazing book, and 3. a delicious cup of coffee. This is my perfect recipe for "me time". I topped off the day doing another thing I love; writing this blog post.

Protein Banana Craze

Iced coffee makes me CRAZY, and I'm BANANAS over protein smoothies and shakes. It's about time I made a coffee banana protein shake! Try this one out!!!


My favorite protein shake right now:
1 scoop Vanilla protein (I like Life Basics)
1 cup coffee
1/4 c almond milk
1 banana
1 tbsp almond butter
1 cup ice

Blend and enjoy!

London Trip: Balance, & Lack There Of

I just got back from a much needed trip out of the country. In the last few months I have gone through a lot of "personal issues", and have been mourning the loss of a few family members. I really felt like my trip came at the perfect time.
I was able to do all the things I had hoped to. I had nice dinners, afternoon tea, brunch, Sunday roast, fish & chips, a pint of ale, saw many sights, shopped a lot, and laughed a lot.






I didn't focus on what I was eating, or how much exercise I was getting. To be honest, it felt really good for people to not see me as "THE FITNESS GIRL".
I do love love love helping people reach their fitness goals, motivating people, working out, and eating healthy. I also know that I was losing balance in my life, and this trip helped me find it. That being said, I am back to my healthy eating and normal routine.

Do you ever feel like you get out of whack? Do you ever feel like you need your life to be out of whack to find out what you really want?

Fall Fashion: Styling For A Trip

I am completely guilty of packing things I don't need on vacations or trips. Sometimes it's fun to bring too much, but when you realize you bring a shirt that doesn't go with anything else in your suitcase it's a big NO NO. We don't want to be lugging around extra baggage through airports, on trains, and busses! 

I have recently gotten in to the habit of styling my outfits by photo. It seems like a lot of work, but to be honest it makes getting ready much easier! I know exactly what to pack, and exactly which jeans I want to wear with which sweater and what boots! 
Here are some of the outfits I'm bringing on my London trip! Notice that some are using the same items as previous photos (to make good use of what I can fit in my suitcase).
