Chia Pudding Recipe

Chia pudding is all the rave right now. I love it sooo much. It's tasty, healthy & is super affordable to make!

Here's my new favorite recipe:

Ingredients:
1 cup almond coconut milk
3 tbsp chia seeds
2 shakes cinnamon
1 shake nutmeg 
1 shake allspice 
1 packet Truvia (or you can use honey/agave)
Fresh fruit (today I went with Blackberries)
1. Put 3 tbsp of chia seeds I n small mason jar or cup that has a lid
2. Pour (while mixing with a spoon) in almond milk.
3. Add spices and stevia & mix with spoon.
4. Put the lid on and vigorously shake (shake it like a Polaroid pictureee🎶)
5. Let this sit for a few hours, I usually let it sit overnight
6. Shake again before opening
7. Top with fresh fruit

Banana PB Protein Pancakes

Ingredients:
1 tbsp coconut flour
1 tbsp pb2
1/4 c. oats
1/2 banana
5 egg whites
Cinnamon 
Stevia

1. In a medium bowl mash up a banana with a fork.
2. Add in coconut flour, pb2, oats, cinnamon, and stevia.
3. Crack 5 eggs in to small bowl, and make sure to separate the yolk. 
4. Stir together.
5. After spraying pan with nonstick spray, heat stovetop to medium/high heat
6. Pour mixture on to pan.
7. Flip pancake.
8. Serve.

Carbs: 35
Protein: 28.5
Fat: 6

Peanut Butter Chia Seed Pudding

Ingredients:
2 tbsp chia seeds
1 c almond milk
1 banana
1 tbsp peanut butter

1. Mash the banana in a bowl. 
2. Stir in chia seeds and peanut butter. 
3. Whisk in the almond milk until combined. 
4. Place in the fridge overnight to thicken and for the seeds to expand.
5. Enjoy!

Summer Greens

Everyone who knows me knows how I like to start my day (sometimes even end my day). I love delicious green smoothies, and for this reason I make tons of them. All different flavors, ingredients, and colors!

Today's recipe:
1 scoop Manitoba harvest hemp protein 
1/2 banana frozen 
2 cups spinach 
1 tbsp almond butter
Ice

Mango Green Smoothie

I'm back from Vaca!!!! This means back to my extra healthy meals. My first stop was Project Juice, second was a long bridge walk, then my third was coffee, and I finally ended up at the grocery store.

Here's what I blended up! 

1/2 coconut water 
1/2 c unsweetened almond milk
1/2 c mango
1 scoop vega 
2 cups kale 
Ice 

Blend them up and enjoy

Gone Bananas Smoothie

I have a smoothie obsession. They never get old as long as I mix things up a little. I happen to have some perfectly ripe bananas and decided to make this smoothie after my workout.
It's pretty delicious, and I definitely recommend adding the cinnamon and vanilla extract. If you want it a little more sweet (maybe your bananas aren't very ripe), you can add stevia for extra sweetness.

Spiced Banana OIAJ

When I'm in a hurry it's always great to have grab n' go meals. I've always wanted to make overnight oats in a jar, so being quite busy this week I decided to give them a shot.

I made up this recipe, and it's delicious. It's creamy, banana-ey, and full of spice! 

Ingredients:
1/3 c oats
1/2 scoop vanilla protein 
2/3 c coconut milk(or milk of choice) 
1/2 mashed banana 
1 tsp cinnamon
1 tsp cashew butter(or nut butter of choice)

1. Mix all ingredients in a jar in the evening.
2. Let soak overnight in fridge.
3. Grab and enjoy cold for breakfast

Coco-Greens Smoothie

2013 came and went. Let's start 2014 off right, healthy and tasty! 

Coco-Greens Smoothie 
1 scoop vanilla protein ( I use life's basics vegan)
1 cup coconut water
1 cup coconut milk
1 frozen banana(if it isn't frozen just double the ice)
2 cups baby kale (or 3 leaves)
1/2 c ice

1. Place infredients in blender
2. Blend.
3. Drink!

Chocolate Cinnamon Chia Shake

Ok, this hit the spot. Sometimes I want to jump through my computer and make people drink or eat my recipes when they are this good! This tastes better than a chokate shake from In-n-out to me! 

Ingredients:
1 scoop Life basics vegan protein(chocolate)
1 cup Calafia farms almond milk (unsweetened)
2 dates (pitted organic)
2 tbsp chia seeds (organic and raw)
Organic cinnamon & vanilla to taste
1 cup ice.

Throw everything in to a blender and enjoy!!

Fun fact: chia seeds have lots of fiber, omega fatty acids, calcium, antioxidants and even protein!

Lean & Green Protein Pancakes

Why not start off the morning with some greens. These look like HULK pancakes, but you can't taste the veggies and they are simply delicious! They are super healthy, lean, & green!

Recipe:
2 Egg whites 
2 tbsp Vanilla protein powder
1/4 c. Oats 
1 tbsp. Coconut flour
1 cup spinach
1 tbsp. Unsweetened apple sauce 
1 tbsp. Unsweetened almond milk
1 tsp. Cinnamon

Directions:
1. Blend ingredients together (I use a vitamix or nutribullet)
2. On pan pour 1/5 batter, flip when golden brown.
3. Repeat with the rest of the batter.
4. Enjoy! ( I like adding stevia and sometimes almond butter on top).

Protein Banana Craze

Iced coffee makes me CRAZY, and I'm BANANAS over protein smoothies and shakes. It's about time I made a coffee banana protein shake! Try this one out!!!


My favorite protein shake right now:
1 scoop Vanilla protein (I like Life Basics)
1 cup coffee
1/4 c almond milk
1 banana
1 tbsp almond butter
1 cup ice

Blend and enjoy!

Sweet Treat Smoothie

I always crave a little something sweet before bed, and tonight I decided to fulfill that craving... Guilt-free! I made this smoothie that is so simple, yet so creamy and delicious! 

This recipe can be enjoyed for breakfast,
as a snack, post-workout,or before bed!
Ingredients:
1/2 Banana (frozen is even better)
1 scoop vegan chocolate protein 
1 cup almond milk
1 tbsp flaxseed ( you can also use chia, or hemp seeds)
1 cup ice

1. In a blender mix all ingredients until they are blended smooth.
2. Enjoy!

Baked Avocado Eggs

I saw a photo of these delicious eggs and had to try them! They are so creamy and delicious I definitely recommend spending the time on making this delicious breakfast! 

Ingredients:
2 free range organic eggs (local & veg fed)
1 avocado
Salt & pepper
Other spices (I tried chili powder & paprika)

Directions:
1. Preheat the oven to 425.
2. Cut open avocado and take out the pit.
3. Crack one egg in to the groove of 1/2 of the avocado, and do the same for the other 1/2.
4. On baking sheet place the avocado's with the eggs and add your spices.
5. Bake for 13-15 minutes.

Thea's Summer Kale Smoothie

It's time I share another smoothie recipe! I literally have a green smoothie almost every day. Green smoothies are nutrient rich drinks, that seriously taste delicious! They are sweet, creamy, and whatever you want them to be.

I made one today, and had to share!


  • Feel free to add a whole banana, or switch up the banana with any other desired fruit.
  • The protein powder I used today is called Dale's and you can buy it here.  
  • I like to enjoy my green smoothies as a breakfast, snack, post-workout, or sweet treat at night!

Morning Greens: Smoothie Time

With the warmer weather I have been craving refreshing fruity drinks. I decided make a fruity recipe and add greens for an extra boost of nutrients! Try this recipe, or get creative and make your own!

Ingredients:
4 Large strawberries
1 cup almond milk
1 tbsp flaxseed
1 shot wheatgrass (or spirulina powder)
1 scoop protein powder (my favorite Dale's Protein Powder)

Directions:

1. In your Vitamix or Nutribullet blend all ingredients!

Simple, and delicious.

Pumpkin Paleo Protein Pancake

My friend Kate makes a mean protein pancake. I tried to replicate her deliciousness and I seriously fell in love! This is amazing

Pumpkin Paleo Protein Pancake
6 egg whites
1/4 C. Canned pumpkin (not pumpkin pie)
1 Tbsp. coconut flour
1 Tbsp. ground flaxseed meal
1 Tbsp. cinnamon
1 Tbsp. coconut butter (Artisana)

1. In a medium bowl mix with an electric mixer (or in my case a fork) egg whites, pumpkin , coconut flour, flaxseed meal, cinnamon)
2. Spray frying pan with non stick spray.
3. Pour mixture on pan at medium heat.
4. Flip pancake when it starts to bubble.
5. The pancake will fluff up when ready.
6. Top pancake with 1 tbsp. coconut butter.
7. Dig in!

I have been in the juice mood lately, but I have noticed that most juices (even at health food stores) are filled with fruit. There is nothing wrong with fruit, but I see them as fillers to make things super duper sweet. Instead, I made my own… and LOVED IT!
You need a juicer for this one, sorry!
1 bunch kale
2 cucumbers
1 green apple
½ handful cilantro
1 lime

Sweet Potato Paleo Pancake

This is the season for yummy sweet potato! I wanted to make a warming breakfast, without oatmeal. I came up with this, and thought I'd share!
Sweet Potato Paleo Pancake Recipe: 

1/2 c. sweet potato or yams (puree)
4 egg whites plus 1 whole egg
Pinch cinnamon
Pinch nutmeg & allspice (optional)
Almond butter

1. Whisk all ingredients together leaving out the almond butter.
2. Pour on to pan or griddle.
3. Flip.
4. Serve, I like to add on a tbsp. of almond butter or 1 tbsp crushed almonds

Thea's Banana Protein Pancake

I have made SO many different types of protein pancakes, and today is a new day that called for a new recipe!

Ingredients:
1/2 Banana (soft and mashed)
2 Egg whites
1 Scoop protein powder (I used a strawberry banana flavor this time and it actually was quite delish)
Pinch of cinnamon
Splash of almond milk or coconut milk
Optional: berries, or coconut butter

1. In medium bowl crack in two eggs and separate the whites.
2. Mash banana in with the egg whites.
3. Mix in the milk.
4. Stir in protein powder and cinnamon.
5. Spray pan with non-stick spray.
6. Pour mixture on to pan, then once ready GO AHEAD AND FLIP!!!
7. Serve when pancake turns medium brown.
8. Eat and enjoy! This morning I added a tablespoon of coconut butter on top, it was so creamy and delicious!
